Tonight’s dinner was pork chops with a mango salsa.
The salsa was a combination of red onion, green onion, tomato, jalapeno, mango, cilantro, limejuice, salt and pepper. I think I went a little heavy on the cilantro. I love the stuff, so it didn’t bother me any.
The pork chops were rubbed with chili powder, cumin, curry powder, turmeric, salt and pepper. Then quickly fried for about 3 minutes on each side. Then they took a little rest under some aluminum foil for about 5 minutes to finish cooking.
I served them with the salsa on top along side my world famous broccoli salad. (I used some of the fat from cooking the bacon to cook the pork chops.)
All I can say was there were no leftovers…..
