That upper rack on your grill isn’t just for keeping food warm. You can also cook up there as well. I like to grill chicken there away from direct heat so it doesn’t burn.
Here I have perfectly grilled chicken legs. I seasoned them in the morning with salt, pepper, and Thai spice blend. Then when I got home from work, I put the grill on low and cooked then on the upper rack for about an hour turning after 30 minutes.
